Serve a side salad with every meal as an easy way to boost your intake of nutrients and minerals or enhance a variety of other dishes by adding salad leaves for extra flavour - simply stir into pasta or minestrone or try piling watercress or rocket leaves on top of pizza. Fish stuffed with lemon and herb salad is delicious too...

When adding dressing to a salad always add the dressing to the bowl first, then add the salad leaves and toss the salad within the bowl. This will ensure light coverage over all leaves.
