Crunchy cheddar and apple salad

Preparation time: 10 minutes
Cooking time: 3 minutes
Serves: 2

Ingredients

2 thick slices wholemeal bread, cubed
2 tbsp vegetable oil
1 small red apple, quartered and cored
juice half a lemon
50g/2oz mature cheddar cheese, grated
1 carrot, peeled and grated
1 (200g) bag crispy leaf salad

Method

Toss the bread cubes in 1 tbsp of the oil then toast under a medium grill for 3mins, tossing occasionally until golden and crisp. Set aside.

Thinly slice the apple and place in a bowl with the lemon juice and remaining oil, toss to mix. Add the cheese, carrot, croutons and salad leaves. Toss well to mix before serving.
