Mango and smoked chicken with asparagus

Ideal as a picnic main course or healthy main meal on
sunny day

Ingredients

1 (100g) pack asparagus tips
1 small, ripe mango, peeled and stoned
1 (100g) pack smoked chicken
1 (140g) bag watercress, spinach and rocket salad
For the dressing:
Juice of ½ lime
1sbsp olive oil
1 tbsp chopped fresh coriander

Method

Cook the asparagus tips in a small pan of boiling water for 3 mins or until just tender. Drain in a sieve and rinse in cold water until cool. Drain and place in a large salad bowl.

Slice the mango flesh into bite sized slices, along with the smoked chicken. Add to the bowl with the salad leaves.

Whisk all the dressing ingredients together and season to taste with salt and pepper. Drizzle the dressing over the salad, toss well to mix before serving.
