Crab and ginger salad with chilli sauce

People can be put off using Thai ingredients, but this easy salad is a good way to impress guests and can make a meal in minutes. Use a herb salad bag mix.

Ingredients

225g/8oz cucumber, finely sliced
3 spring onions, trimmed and sliced
2.5cm/1 inch piece of fresh root ginger, peeled and grated
1 red chilli, deseeded and chopped
1 (20g) pack fresh coriander leaves, roughly chopped
1 x (170g) can of white crabmeat, drained
15ml/1 tbsp of sweet chilli sauce
zest and juice of 1 lime
salt and freshly ground black pepper
2 handfuls of herb salad mix

Method

In a bowl, mix the cucumber, onions, ginger, chilli, coriander and crab together with the chilli sauce and lime zest and juice. Season to taste.

Divide the salad leaves between two plates or bowls, then top with the crab mixture. Serve with lime wedges as garnish.
